Oi Muchim (Korean Cucumber Salad)

Ingredients

  • 1 cucumber, sliced evenly
  • 1/4 white onion, diced
  • 1 spring onion, sliced
  • 3 cloves garlic, finely chopped

Dressing

  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar or white vinegar
  • 1 tbsp sugar (or other sweetener of your choice)
  • 1 tbsp sesame oil
  • 1 tbsp Gochugaru (optional for spice)
  • 1 tsp toasted sesame seeds
  • 1/2 tsp salt

Method

    • Combine all the dressing ingredients in a bowl.
    • Add the sliced cucumbers, onions, spring onions, and garlic.
    • Combine well until the cucumbers are evenly coated.
    • Serve immediately and enjoy!
