Oi Muchim (Korean Cucumber Salad)
Ingredients
- 1 cucumber, sliced evenly
- 1/4 white onion, diced
- 1 spring onion, sliced
- 3 cloves garlic, finely chopped
Dressing
- 1 tbsp soy sauce
- 1 tbsp rice vinegar or white vinegar
- 1 tbsp sugar (or other sweetener of your choice)
- 1 tbsp sesame oil
- 1 tbsp Gochugaru (optional for spice)
- 1 tsp toasted sesame seeds
- 1/2 tsp salt
Method
- Combine all the dressing ingredients in a bowl.
- Add the sliced cucumbers, onions, spring onions, and garlic.
- Combine well until the cucumbers are evenly coated.
- Serve immediately and enjoy!
