Bircher Muesli

Ingredients

  • ⅓ cup old-fashioned oats
  • 1 tablespoon of chopped dates or raisins
  • ¼ teaspoon ground cinnamon (ground ginger or mixed spice works well too)
  • 1 tablespoon almond butter or peanut butter
  • ⅓ cup milk of choice plus extra for serving (optional)
  • 1 medium apple, preferably organic
  • A small handful of chopped nuts (pecans, walnuts or almonds) or mixed seeds (sunflower, pumpkin, hemp hearts)
  • Drizzle of honey or maple syrup, if desired

Method

  • In a large jar or bowl combine the oats, raisins/dates, cinnamon and nut butter. Stir well. Then add the milk and stir again.
  • Grate the apple, add to the oat mixture and stir well.
  • Cover and refrigerate for at least 30 minutes, or up to 3 days.
  • When you’re ready to serve, top the oat mix with the nuts or seeds, a splash of milk and/or a drizzle of honey (both optional).
