Dr T’s Granola
Ingredients
- 4 cups of oats
- 2 cups of sunflower seeds
- 2 cups of pumpkin seeds
- Half a cup of chia seeds
- Half a cup of linseeds
- 1 cup of coconut shavings
- 1 cup each of walnuts, almonds and hazelnuts
- 2 tablespoons of coconut oil
- 2 tablespoons of maple syrup
- 1 teaspoon of ginger and turmeric
- 2 teaspoons of cinnamon
Serve with
- fresh blueberries
Method
- Heat the oven to 160°C/Gas mark 4 and line tray with baking paper.
- Pulse nuts in a food processor if you prefer them roughly chopped.
- Add to a large bowl with oats and mixed seeds.
- In a small pan gently heat the coconut oil, cinnamon, ginger, turmeric and maple syrup, until the oil has melted.
- Pour over the oat, coconut flakes, seed and nut mixture and coat evenly.
- Spread out evenly in baking tray and bake in the oven for 20 minutes until golden brown.
- Remove from oven and let it cool before transferring to an airtight container.
