Quick Red Onion Marmalade

Ingredients

  • 300ml cider vinegar
  • 2 tbsp golden caster sugar
  • 2 tsp salt
  • 6 black peppercorns
  • 6 coriander seeds
  • 1 bay leaf
  • 3 small red onions, sliced into rings

 

 

Method

    • Pour the vinegar into a pan, add the sugar, salt, spices, and bay leaf, simmer until the sugar and salt have dissolved, and remove from the heat.
    • Put the onion slices in a sieve, over the sink pour boiling water from the kettle over them, and drain.
    • Put the onion rings into a jar and add the warm vinegar mixture
    • Cool, then chill in the fridge for about 2 hrs
    • Keeps for 2 weeks in the fridge

    Enjoy as a side dish or include in a buddha bowl!
