Quick Red Onion Marmalade
Ingredients
- 300ml cider vinegar
- 2 tbsp golden caster sugar
- 2 tsp salt
- 6 black peppercorns
- 6 coriander seeds
- 1 bay leaf
- 3 small red onions, sliced into rings
Method

- Pour the vinegar into a pan, add the sugar, salt, spices, and bay leaf, simmer until the sugar and salt have dissolved, and remove from the heat.
- Put the onion slices in a sieve, over the sink pour boiling water from the kettle over them, and drain.
- Put the onion rings into a jar and add the warm vinegar mixture
- Cool, then chill in the fridge for about 2 hrs
- Keeps for 2 weeks in the fridge
Enjoy as a side dish or include in a buddha bowl!
