Emma’s Nutty Granola
Ingredients
Makes 600g
- Mix 600g of dry ingredients
- 225g jumbo oats (can use GF if needed)
- 225g mixed chopped nuts (e.g. walnuts, almonds, cashew nuts, Brazil nuts, hazelnuts)
- 50g desiccated coconut
- 100g mixed seeds (e.g. pumpkin seeds, sunflower seeds, flaxseeds )
- 3 tablespoons of coconut oil
- 3 tablespoons of maple syrup
- 1 teaspoon ground cinnamon
- 2 pinches of salt
Method
- Preheat oven to 175 degrees celcius
- Mix the 600g of dried ingredients together in a bowl plus 1 pinch of salt
- Melt the coconut oil in a large pan then take off the heat
- Add the other pinch of salt and cinnamon and stir to release flavours
- Add the maple syrup and stir to coat
- Tip the granola in to the pan and stir round until coated evenly
- Tip into a large roasting tin and spread evenly
- Transfer to oven for 30-45 minutes until golden brown. Remove a couple of times part-way through to mix up, so it toasts evenly
- Store in an air-tight glass jar.
Serve with Greek yoghurt / kefir / milk, and fresh fruit
