Emma’s Nutty Granola

Ingredients

Makes 600g

  • Mix 600g of dry ingredients
  • 225g jumbo oats (can use GF if needed)
  • 225g mixed chopped nuts (e.g. walnuts, almonds, cashew nuts, Brazil nuts, hazelnuts)
  • 50g desiccated coconut
  • 100g mixed seeds (e.g. pumpkin seeds, sunflower seeds, flaxseeds )
  • 3 tablespoons of coconut oil
  • 3 tablespoons of maple syrup
  • 1 teaspoon ground cinnamon
  • 2 pinches of salt

 

 

Method

  • Preheat oven to 175 degrees celcius
  • Mix the 600g of dried ingredients together in a bowl plus 1 pinch of salt
  • Melt the coconut oil in a large pan then take off the heat
  • Add the other pinch of salt and cinnamon and stir to release flavours
  • Add the maple syrup and stir to coat
  • Tip the granola in to the pan and stir round until coated evenly
  • Tip into a large roasting tin and spread evenly
  • Transfer to oven for 30-45 minutes until golden brown. Remove a couple of times part-way through to mix up, so it toasts evenly
  • Store in an air-tight glass jar.

Serve with Greek yoghurt / kefir / milk, and fresh fruit
