Keto Seed Crackers
Ingredients
- 50g poppy seeds
- 75g sesame seeds
- 100g sunflower seeds
- 75g pumpkin seeds
- 75g ground flaxseed
- 1 tbsp ground psyllium husk powder
- 3 tbsp nutritional yeast
- 1 tsp salt
- 50g melted coconut oil
- 200ml boiling water
Optional herbs and spices – garlic granules, chilli flakes, dried rosemary, oregano, or your favourite herb.
Method
- Preheat the oven to 150°.
- Mix all dry ingredients together in a bowl.
- Add the boiling water and oil, mix well.
- Keep working the dough until it forms a ball and has a gel-like consistency.
- Divide into 4 balls to work separately.
- Place each ball onto parchment baking paper, place another sheet on top and use a rolling pin to roll the dough out to a thin layer – this will also depend on the type of seeds you are using.
- Remove the top sheet, slide onto a baking tray and bake for 10 minutes. Once it looks golden, turn over and peel off the second sheet, return to the oven for a further 10 minutes to crisp up. Seeds are heat sensitive, so pay close attention towards the end to avoid burning.
- Remove from the oven and cool on a wire rack. Once crisp and cool, break into pieces and store in an airtight container.
