Dr T’s Granola

Ingredients

  • 4 cups of oats
  • 2 cups of sunflower seeds
  • 2 cups of pumpkin seeds
  • Half a cup of chia seeds
  • Half a cup of linseeds
  • 1 cup of coconut shavings
  • 1 cup each of walnuts, almonds and hazelnuts
  • 2 tablespoons of coconut oil
  • 2 tablespoons of maple syrup
  • 1 teaspoon of ginger and turmeric
  • 2 teaspoons of cinnamon

Serve with

  • fresh blueberries

Method

  • Heat the oven to 160°C/Gas mark 4 and line tray with baking paper.
  • Pulse nuts in a food processor if you prefer them roughly chopped.
  • Add to a large bowl with oats and mixed seeds.
  • In a small pan gently heat the coconut oil, cinnamon, ginger, turmeric and maple syrup, until the oil has melted.
  • Pour over the oat, coconut flakes, seed and nut mixture and coat evenly.
  • Spread out evenly in baking tray and bake in the oven for 20 minutes until golden brown.
  • Remove from oven and let it cool before transferring to  an airtight container.
