Dukkah
Ingredients
- 2 tbsp sesame seeds
- 2 tbsp coriander seeds
- 2 tbsp sunflower seeds
- 2 tbsp pumpkin seeds
- 2 tbsp fennel seeds
- 2 tsp cumin seeds
- 20g hazelnuts
- 1/4 tsp dried chilli flakes
- Salt & pepper
Method
- Dry fry sesame, sunflower, pumpkin and cumin seeds for 2–3 minutes, cool.
- Dry fry almonds and hazelnuts for 5 minutes, cool.
- Blend nuts and seeds.
- Transfer to a bowl and stir in the chilli flakes and salt and pepper.
- Store in a jar in a cool place
- Use as a seasoning to sprinkle over grilled vegetables, salads, meat and fish or mix with oil and brush over hot flatbreads.
