Dukkah

Ingredients

  • 2 tbsp sesame seeds
  • 2 tbsp coriander seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp fennel seeds
  • 2 tsp cumin seeds
  • 20g hazelnuts
  • 1/4 tsp dried chilli flakes
  • Salt & pepper

Method

  • Dry fry sesame, sunflower, pumpkin and cumin seeds for 2–3 minutes, cool.
  • Dry fry almonds and hazelnuts for 5 minutes, cool.
  • Blend nuts and seeds.
  • Transfer to a bowl and stir in the chilli flakes and salt and pepper.
  • Store in a jar in a cool place
  • Use as a seasoning to sprinkle over grilled vegetables, salads, meat and fish or mix with oil and brush over hot flatbreads.
