Cauliflower Dream Soup
Ingredients
Serves 2-3 people
- ½ cauliflower, incl. green leaves
- 1 white onion
- 1 sweet potato
- 1 clove garlic
- ½ inch crushed ginger
- 3 tablespoons olive oil
- 1 black cardamon
- 1 teaspoon garam masala
- ½ teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 tablespoon tamari
- 900 ml vegetable stock + 1 teaspoon low-salt vegetable bouillon powder
- 1 tin half-fat coconut milk, or 280ml soya milk
Method
- Wash and chop the cauliflower
- Peel and chop the onion and sweet potato
- Heat the olive oil in a pan, add the chopped onion, crushed garlic and ginger, and sauté for 10 minutes
- Then add all the spices and tamari
- Cook for 1 minute
- Add the vegetable stock and remaining vegetables
- Bring to the boil, then simmer and cook gently for approximately 15 minutes until tender
- Blend, and stir through the coconut or soya milk
